Spaghetti Squash with Butter and Garlic

Melt 1 Tbsp butter in 2 Tbsp of cooking oil. Sauté two cloves of grated or chopped garlic until soft, about one minute. Add 1 c. spaghetti squash strands. Sauté the strands and garlic 5 more minutes, being careful to separate the strands so they cook evenly. Serve hot. The following may be added for more flavor and a heartier dish: chopped cooked bacon, ham, or cooked sausage, tiny cooked shrimp, chopped red bell pepper, celery, cooked peas, or sliced green onions. Cheese or hot sauce can be added after cooking. This dish is simple, satisfying, and very flexible.
